1. Add Ingredients to Pot
Place elderberries, rosehip, cinnamon, anise star, and cloves in a pot. Add water to cover the ingredients.
2. Cook Under Pressure
Secure the lid, ensuring it’s properly sealed. Set the pressure cooker to manual mode on high pressure for 8 minutes.
3. Release Steam
Once the cooking time is complete, carefully vent the cooker to release the steam.
4. Mash and Strain
After opening the lid, mash the cooked berries to extract all the juice. Strain the mixture using a fine mesh strainer.
5. Cool and Add Honey
Allow the juice to cool slightly. Stir in honey until fully dissolved.
